Thumbprint Cookies with Tiptree Christmas Preserve
Thumbprint cookies are a delicious holiday classic with their buttery shortbread base and warm jam center. It's simple and easy to make and works great for holiday gifts, cookie swaps, or holiday get-togethers. This recipe uses Tiptree Christmas Preserve for the filling, but it can easily be substituted with your choice of any Tiptree flavor.
Tiptree Christmas Preserve has a strong and fruity flavor, accompanied by the smell of cinnamon. It is completely unique, made of the original exquisite combination of red currants, Victoria and Damson plums, Sultana raisins, and a secret blend of spices. This was made from fresh hand-picked fruit grown on Tiptree’s farm in the UK.
How to Make Thumbprint Cookies with Tiptree Christmas Preserve
Ingredients You Will Need:
- 1 stick unsalted butter, at room temperature
- ½ cup unsifted powdered sugar
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 large egg yolk
- 1 ½ cups all-purpose flour
- ½ cup white sugar
- ½ cup Tiptree Christmas Preserve, divided
Preheat the oven to 375°F.
Mix butter and powdered sugar together with a rubber spatula until creamy. Add vanilla extract, salt, and egg yolk. Mix with spatula. Add flour and blend until just combined.
Roll dough into 1 ¼-inch balls. Roll balls in a plate of white sugar to coat; roll again between your palms. Place the balls on a non greased cookie sheet and press a light indentation into the center of each with your finger. Drop Tiptree Christmas Preserve into each indentation.
Bake for about 10 minutes at 375°F. Let cool before icing.
How to Make Icing
Ingredients You Will Need:
- 1 cup powdered sugar
- 1 tbsp milk
While cookies are cooling, mix the powdered sugar with milk. Pipe icing on top of cookies in a zigzag pattern. Let sit for 15 minutes before serving
