Tiptree Morello Cherry Pie

This classic cherry pie gets a delicious upgrade with the rich, tart flavor of Tiptree Morello Cherry Preserve. It’s the perfect dessert for any occasion, especially Valentine's Day.
Ingredients:
For the Pie Crust:
- 2 1/2 cups all-purpose flour
- 1 tsp salt
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 6 tbsp ice water (more if needed)
For the Filling:
- 1 jar Tiptree Morello Cherry Preserve (approximately 12 oz)
- 2 tbsp cornstarch
- 2 tbsp lemon juice
- 1/2 cup granulated sugar (adjust to taste)
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract (optional)
- 1/4 tsp ground cinnamon (optional)
For the Topping (Optional):
- 1 egg (for egg wash)
- 1 tbsp coarse sugar for sprinkling
Instructions:
1. Prepare the Pie Crust:
In a large bowl, combine flour and salt. Cut the cold butter into the flour using a pastry cutter or your hands until the mixture resembles coarse crumbs. Gradually add ice water, 1 tbsp at a time, until the dough just begins to come together. Split the dough in half, form into discs, and wrap in plastic. Chill for at least 30 minutes.
2. Make the Cherry Filling:
In a medium saucepan, combine Tiptree Morello Cherry Preserve, cornstarch, lemon juice, sugar, vanilla, and almond extract. Cook over medium heat, stirring frequently, until the mixture thickens, about 5–7 minutes. Let it cool for a few minutes.
3. Assemble the Pie:
Preheat your oven to 375°F (190°C). Roll out one dough disc on a lightly floured surface to fit a 9-inch pie pan. Transfer it to the pan and trim any excess dough. Fill with the cherry mixture, spreading it evenly.
4. Add the Top Crust:
Roll out the second dough disc and place it over the filling. Trim any excess dough, then crimp the edges together. Use a sharp knife to cut a few slits in the top crust to allow steam to escape.
5. Optional Egg Wash:
In a small bowl, whisk the egg with a tablespoon of water. Brush the egg wash over the top crust and sprinkle with coarse sugar for a golden, crisp finish.
6. Bake the Pie:
Bake the pie for 45–50 minutes, or until the crust is golden brown and the filling is bubbling.
7. Cool and Serve:
Let the pie cool for at least 1 hour before slicing to allow the filling to set. Serve with whipped cream or vanilla ice cream if desired.
