Ingredients:

Cookies:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp finely ground Earl Grey tea leaves (from about 3–4 tea bags)

Earl Grey Glaze (optional):

  • 1 cup powdered sugar
  • 1–2 tbsp strongly brewed Earl Grey tea, cooled
  • 1/2 tsp lemon juice (optional, for a hint of citrus)

Instructions:

  1. Prepare Tea Leaves: If using tea bags, cut them open and finely grind the tea leaves using a spice grinder or by crushing them with a rolling pin.

  2. Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2–3 minutes.

  3. Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

  4. Add Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and ground Earl Grey tea leaves. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

  5. Chill the Dough: Cover the dough and refrigerate for at least 30 minutes. This makes it easier to handle and prevents spreading.

  6. Preheat Oven and Shape Cookies: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Roll the chilled dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet. Flatten each ball slightly with your hand or the bottom of a glass.
