Chicken Almondine with Tiptree Apricot Preserves

Tiptree isn't only good for desserts - you can use it in entrees as well. This flavorful Apricot chicken breast recipe will put a unique spin on a kitchen favorite.

Apricots are a peach-like fruit about with a small diameter of about a few inches. It's technically called a "drupe," or a "stone fruit" as you'll often hear when people are talking about peaches. It has a yellow-orange skin and flesh tone, comes with a large seed in the middle, and has soft velvety outer skin. Apricots are eaten worldwide and are associated with medicinal and traditional foods in many culture. The flavor profile of an apricot is often described as musky and slightly tart. Eaten raw, they aren't the most appealing foods, but when processed - either dried, preserved, or cooked down - their natural sweetness comes out.

As for chicken almondine, it's a traditional recipe that features few ingredients and is able to be cooked in a single pan. Almondines are a sort of chameleon in the culinary arts as they can be found in fine dining restaurants while at the same time making really simple weeknight dinners.

Cooking the shallots

Ingredients you’ll need:

  • 2 Shallots
  • Olive Oil
  • Butter

First, you'll want to cook down the shallots. Turn your pan on medium heat and add in your oil and butter. Once it's up to temperature, add in your sliced shallots. Allow 10 minutes or so for the shallots to cook down. They'll start to smell amazing and become more translucent in color. Once they're done, pull them out of the pan and set aside.

Making the Chicken Almondine

Ingredients you’ll need:

  • 4 chicken breasts without skin
  • Flour for dusting
  • Sea salt and ground pepper
  • 1 tsp Italian seasoning
  • 4 tbsp Tiptree Apricot Preserve
  • Small wineglass of chicken stock
  • Dash of white wine
  • Handful of toasted almonds for garnish

Set your oven to 160 degrees. While it's warming up, add more oil and butter to your pan and bring it to high heat. Lightly dust your chicken breasts with flour and brown them in the pan on high heat. Once your chicken is nicely browned, turn off the heat on the pan and add your cooked shallots back in around the chicken breasts.

Warm up your chicken stock in the microwave and mix in your apricot jam. Once mixed pour over the ingredients in the pan and add in your seasonings, toasted almonds, and a dash of white wine. Cover the pan and place in the over to cook for approximately 50 minutes. You can tell your chicken is done by skewering the thickest part of the breast. If the juices run clear, then you can pull it out of the oven.

Optional - toast flaked almonds in a dry pan and scatter onto chicken just before serving. Serve with simple potatoes and green beans or perhaps couscous.
