How To Make Lemon Curd & Strawberry Preserve Swirl Bars

Bright, tangy, and perfectly sweet, these delightful bars feature a swirl of Tiptree Lemon Curd and Tiptree Little Scarlet atop a buttery shortbread crust. A perfect spring treat!

Ingredients you'll need:

For the Shortbread Crust:

  • 1 cup unsalted butter, softened

  • ½ cup granulated sugar

  • 2 cups all-purpose flour

  • ¼ tsp salt

Step 1: Prepare the Crust & Crumble Topping

Preheat your oven to 350°F and line an 8x8-inch baking dish with parchment paper. In a mixing bowl, cream together butter and sugar until light and fluffy. Add flour and salt, mixing until a crumbly dough forms.

Press two-thirds of the mixture evenly into the bottom of the prepared dish to form the crust. Set aside the remaining one-third of the mixture for the crumble topping. Bake the crust for 15 minutes or until lightly golden.

Step 2: Make the Filling

In a separate bowl, whisk together eggs, sugar, flour, lemon juice, and vanilla extract until smooth. Pour the mixture over the baked crust.

Step 3: Swirl the Jam & Lemon Curd

Dollop spoonfuls of Tiptree Lemon Curd and Tiptree Little Scarlet over the filling. Use a skewer or knife to gently swirl them together, creating a marbled effect.

Step 4: Add the Crumble Topping & Bake

Sprinkle the reserved shortbread crumble evenly over the top. Bake for 20-25 minutes, or until the center is set and the crumble topping is golden brown.

Step 5: Cool & Serve

Allow the bars to cool completely before slicing into squares. Dust with powdered sugar if desired and serve at room temperature or chilled.

Serving & Storage

Store in an airtight container in the fridge for up to 5 days.
