Pavlova using Tiptree Little Scarlet
Fifty (yes fifty) fresh, ripe Little Scarlet strawberries are gently cooked and packed into each glass jar within hours of being picked. The Little Scarlet, each no bigger than the size of a dime, is unique to Tiptree and grown only on our farm. It's been grown for over a hundred years on our farms, prized for its intense flavour and fragrance. It's also secret agent James Bond's favorite preserve.
How to make the Pavlova
Ingredients you’ll need:
- Egg whites from 3 large eggs
- 170 grams Castor Sugar
- 1 tsp Corn Flour
- 1 tsp Freshly squeezed lemon juice
- 200 ml Fresh double cream
- 2-3 tbsp of Crème Fraiche
- 2 tbsp Tiptree Little Scarlet
- Optional: Fresh Strawberries to decorate
Instructions:
- Preheat your oven to 275°F (135°C).
- Mark an 8-inch circle on non-stick baking paper. Flip the paper over and place on a baking sheet (You can use butter to help secure it!)
- Separate eggs and place the egg whites in a clean bowl and whip until it while slowly adding sugar in until it is firm
- Fold in sifted corn flour and lemon juice
- Scoop out the mix and place onto the baking sheet circle, peaking the outsides up.
- Place in oven and bake for 40 minutes then reduce heat to 250°F (120°C) and continue baking for another 30-35 minutes.
- Turn off the heat and allow pavlova to cool
- Whip the double cream, then fold in crème fraiche. Finally, swirl in the Little Scarlet (do not fully mix in)
- Place pavlova on a serving dish and top with the cream mixture and decorate with fresh fruits.
- Serve and enjoy!
