Lime Curd Tartlets using Tiptree Lime Curd
How to make the Lime Curd Tartlets
Ingredients you’ll need:
- 2 deep-dish refrigerated pie crusts (or the equivalent of 2 homemade pie crusts)
- 1 cup Tiptree Lime Curd
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 2 teaspoons white chocolate instant pudding mix
- Lime zest (option for garnish)
Instructions:
- Preheat your oven to 450°F and prep two 12-well mini muffin tins with non-stick spray and set aside.
- Unroll the pastry and using a round cutter/cookie cutter, cut each sheet into 12 rounds. The rounds need to be slightly larger than the wells in the muffin tin.
- Gently press each pastry round into the wells of the muffin tins and use a fork to poke holes in the bottom of the dough.
- Bake the shells for 9-12 minutes or until golden and lightly crisp. Remove from oven and let cool for a few minutes in the pan, then move to a cooling rack.
- Add heavy cream, powdered sugar, and instant pudding to a medium-size bowl. Use a mixer to mix until it holds stiff peaks. Scoop into a piping bag.
- When shells are cool, fill each one with a spoonful of Tiptree Lime Curd.
- Use the piping bag and pipe a swirl of whipped cream onto each tart. Garnish with fresh lime zest if desired.
