Lemon Panna Cotta using Tiptree Lemon Marmalade
Tiptree Lemon Marmalade is a delicious, semi-opaque marmalade, with fine cut peel. We add a little extra sugar to contrast the tartness of the lemon, to give it a sweeter flavor. Only using the finest citrus fruits in our recipes, the lemons are sourced fresh from Sicily.
How to make the Jammy Cookies
Ingredients you’ll need:
- 1 cup whole milk (divided)
- 2 teaspoons unflavored powdered gelatin
- 2 ½ cups heavy whipping cream
- ½ cup sugar
- Peel from 1 lemon
- 1 vanilla bean
- 1 cup of Tiptree Lemon Marmalade
Instructions:
- Pour ½ cup of milk into a medium bowl and sprinkle with gelatin. Let sit until gelatin softens (approx. 10 minutes)
- While gelatin is softening, combine cream, sugar, lemon peel, and remaining ½ cup of milk in a large saucepan.
- Cut the vanilla bean in half and split open lengthwise. Scrape vanilla seeds from bean and add to saucepan.
- Bring cream mixture to a simmer over medium heat and whisk until sugar dissolves. Remove from heat and let rest for 10 minutes.
- Bring the cream mixture back to a simmer and add the gelatin mixture, stirring until fully dissolved.
- Take mix off the heat and strain using a fine-mesh strainer. Throw away the solids.
- Divide liquid among six ¾ -cup ramekins and chill uncovered for at least 6 hours.
- When panna cotta is set, add a layer of Tiptree Lemon Marmalade to the top.
