Lamb Steaks with Red Currant Glaze using Tiptree Red Currant Jelly

Red currants are sweet yet immensely tart berries, with similar flavour to blackberries. Compared to other berries, red currants are not that popular as they are too tart to eat by themselves, but made into jams has sweet, intense flavor. This distinctive jelly is perfect to accompany roast lamb but also makes a delicious addition to all gravies. 
 

How to make the Lamb Steaks with Red Currant Glaze 

Ingredients you’ll need: 

  • 4 lamb steaks 
  • 2 tablespoons red wine vinegar 
  • 4 sprigs fresh rosemary, finely chopped 
  • 2 tablespoons water 
  • Salt & Pepper 

 

Instructions: 

  1. Mix the chopped rosemary with salt and pepper and rub on lamb steaks. Preheat grill. 
  2. In a small pan, heat Tiptree Red Currant Jelly with water until melted. Add in vinegar and season to taste. 
  3. Place the steaks on a foil lined baking tray and brush with glaze. Cook under the grill for about 5 minutes on each side or until deep golden brown. Brush frequently with the glaze. 
  4. Transfer the lamb steaks to warmed plates and tip the juices from the baking tray into the remaining glaze and heat through. Pour over the lamb and serve with your choice of vegetables.
