Pork Chops using Tiptree Black Currant

Tiptree's Black Currant Preserve is made with the highest quality black currants and sugar, with a slight tartness that enhances the flavor or sauces and glazes. These wonderful English currants are grown at Tiptree's farm and known to be high in vitamin C 
 
 

How to make the Pork Chops 

Ingredients you’ll need: 

  • 2 tablespoons of Dijon mustard 
  • 2 teaspoons of olive oil 
  • 1/3 cup of red wine vinegar 
  • 1/8 teaspoon freshly ground black pepper 
  • 6 center-cut 4oz pork loin chops, trimmed of fat 

Instructions: 

  1. In a small bowl, whisk together the Tiptree Black Currant Preserve and the Dijon mustard 
  2. In a large non-stick frying pan heat olive oil over medium-high heat. Add the pork chops and cook, turning once, until browned on both sides (approx. 5 minutes per side) 
  3. Top each pork chop with 1 tablespoon of the Black currant Dijon mixture 
  4. Cover and coo for 2 minutes more or until the internal temperature is 145°F 
  5. Transfer porkchops to warmed plates or serving dishes 
  6. Let the frying pan cool a little, and then pour the vinegar into the pan and stir to incorporate the remaining bits of pork and jam in the pan. 
  7. Pour vinegar over the pork chops. 
 
Serve and enjoy!
