Tiptree Ginger-Glazed Roasted Carrots

Ingredients:
1 lb carrots, peeled and cut into sticks or left whole if thin
1½ tbsp olive oil
Salt and freshly ground black pepper, to taste
2 tbsp Tiptree Ginger Preserve
Optional: chopped parsley or sesame seeds for garnish
Instructions:
1. Preheat & Prep:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

2. Season the Carrots:

Place carrots in a bowl or directly on the sheet. Toss with olive oil, salt, and pepper until evenly coated.

3. Roast:

Spread the carrots in a single layer. Roast for 20–25 minutes, flipping halfway through, until fork-tender and lightly browned.

4. Glaze:

Remove the carrots from the oven and gently brush with Tiptree Ginger Preserve. Return to the oven for another 5–8 minutes, just until the preserve is bubbling and starting to caramelize.

5. Serve:

Transfer to a serving dish, garnish with fresh parsley or sesame seeds if desired, and enjoy warm!
